I just made a wonderful coconut cake with Pamela's cake mix and Pamela's vanilla frosting mix. I see that one reviewer thought it was too sweet, but I added organic grated unsweetened coconut to the frosting before smoothing it on the cake and maybe that was enough to tone it down a bit, and we thought it was delicious.
