I have three children, one with a restricted diet. These cookies allow her to have a special treat very similar to the real thing. I think they are better than real chocolate chip cookies. I use soy milk or smart balance instead of the butter. The dough is very sticky and make sure to not over cook them. We have tried several brands of pancake/waffle mixes too.
