A friend made me pancakes out of this mix when we came over for a "breakfast for dinner" night--and I was surprised by how normal they tasted! Now, granted, it's not wheat--but it's not bad. Even the husband liked them, and he's quite picky about GF cooking (we've been burned in the past).
