I love lemon bars, but they take time to make. Someone gave me the Barefoot Contessa's Lemon Bar mix and it definitely cuts down on the time needed from start to eating. But in addition, it is a great lemon bar. The shortbread is buttery and the right texture, and the lemon is tart and delicious.
